These are seriously the best carrots ever. If you like a little spice they are also good with a dash of cayenne pepper thrown in with the honey. I also find this recipe works better with petite cut carrots than with baby carrots, they cook up better.
Ingredients
3 cups baby carrots
1 tbsp honey
1 tbsp olive oil
salt and pepper
cooking spray
Instructions
- Preheat the oven to 425 degrees.
- Place carrots into a shallow bowl and generously coat with cooking spray, sea salt, and fresh ground pepper.
- Arrange carrots on a baking sheet and roast for 20-25 minutes. Shake carrots around about half way through so they roast and get crispy on all sides.
