Creamy Chicken and Gnocchi Soup


Comforting, creamy broth cooked with chicken, gnocchi and fresh spinach. Perfect for winter evenings, great for guests.

Comforting, creamy broth cooked with chicken, gnocchi and fresh spinach. Perfect for winter evenings, great for guests.

Ingredients

  1. 3 tablespoons butter
  2. 3 cloves garlic, finely chopped
  3. 1/4 yellow onion, very finely chopped
  4. 1 package (17.6 oz) gnocchi
  5. 1 carton (32 oz) Progresso™ Chicken Broth
  6. 3/4-1 lb cooked rotisserie chicken, chopped
  7. 1 1/2 tablespoons flour
  8. 2/3 cup half and half
  9. 2 cups fresh baby spinach
  10. Salt and pepper



Steps
  1. Melt butter in a large pot over medium-high heat. Add garlic and onion and sauté until fragrant, about 1 minute.
  2. Add gnocchi, broth and chicken to pot. Bring to a boil and cook until gnocchi are tender, about 3 minutes.
  3. Whisk flour into half and half. Add to pot, stirring just until pot comes to a boil again.
